Nigerian fried rice is a special rice dish that’s made with meat, and mixed veggies (carrots, peas, sweet corn, green beans and spices. You can add a variety of protein in place of the meat it could be shrimp or anyone you prefer.

1. Two cups of boiled rice (13 1/4 ounces; 375 grammes), such as Golden Sella Basmati or Uncle Ben’s Original

2. 3 1/2 cups (825 millilitres) Nigerian-style stock, split, and more as required

3. Two teaspoons (30 millilitres) of vegetable or virgin coconut oil

4. One medium carrot, sliced into 1/4-inch slices (2 3/4 ounces; 75g)

5. One small red or white onion, chopped into 1/4-inch cubes (2 1/4 ounces; 60g)

6. 45 grams, or 1 1/2 ounces of green beans, cut into 1/4-inch-thick circles after trimming the stem ends.

7. Two onions, cut off at the ends, white and green sections separated, each thinly sliced in half lengthwise split 

8. 1/4-inch diced big red bell pepper (2 3/4 ounces; 75g),

Nigerian Fried Rice and Asian fried rice have some similarities and differences which you will find below:

Differences: Chinese fried rice uses cold white rice which is often a day old, but Nigerian fried rice uses rice cooked in beef stock.

African fried rice does not contain eggs, whereas Chinese fried rice does contain scrambled eggs as one of its ingredients.

Nigerian fried rice derives its colour from curry, whilst soy sauce or oyster sauce is used in the other recipe.

Similarities: Rice, vegetables, oil, and one or both types of animal protein are included in both dishes.

Step 1:  Add two tablespoons of oil are heat over medium heat in a big skillet. Cooked rice should be added and sautéed for three to five minutes.

Step 2: Stir in 2 cups of liquid, cover, and simmer over low heat for 12 to 15 minutes, or until rice is slightly stocked and absorbed. After five to ten minutes of cooling, set it away.

Step 3: Add the hard veggies to a saucepan and cook the remaining 2 tablespoons of oil until it’s hot. Add the soft mixed veggies and stir-fry for two to three minutes after seasoning with a touch of salt. Cook for up to two to three minutes.

Step 4: Add curry powder, dried thyme, black or white pepper, and turmeric powder according to taste.

Step 5: Stir the rice carefully, being careful not to overmix it with the veggies. When the rice becomes firm, add one cup of stock and the coconut milk, cover the saucepan, and simmer on low to medium heat for ten to fifteen minutes.

Step 6: Make necessary adjustments after checking if the seasoning is properly cooked 

Add diced green peppers, sautéed prawns and chopped liver to the cooked rice. Simmer for three to five minutes. Take off the heat and proceed to serve.
