 Ogi (pap): A Nigerian Food You Can Easily Make

There is a 90% chance of your Ogi (pap) being watery after its preparation if your village people are against you, but do not worry, I have tips and hacks up my sleeves that will always hand you a win whenever you are preparing Ogi (pap), and it is what I will be sharing with you in this guide.

The African Corn Pudding, Corn Porridge, Ogi, Pap, or Akamu, is achieved by introducing a stirred semi-solid corn/millet starch in cold water to boiled water.

After its victorious achievement, it can be served with Akara, Bread, Beans, Puff-Puff, and any worthwhile recipe.

Additionally, Ogi is sold in most Nigerian streets, and Nigerians do not hesitate to buy it because only the talented ones are believed to be able to prepare this recipe, although that is just a stereotype.

Well, like I stated earlier, I will walk you through how to prepare Ogi in this guide. Be it that your village people are after you or you are not talented, you can achieve this recipe.

Ogi (Pap)

Ogi, Pap, Akamu, Corn Porridge, or Corn Pudding is an African food that serves as breakfast in most Nigerian homes.

If you have not yet gotten a clear view of how this meal is made but you have had custard before, view it that way; it’s typically the same.

Just like custard, Ogi is stirred in cold water before completing the finishing blow with boiled water.

However, it can be tricky to achieve this recipe, unlike custard.

First and foremost, you need to pay close attention while preparing it, except if you want to drink white water.

Ingredients To Prepare Ogi (Pap)

The main ingredients needed to prepare ogi (pap) are cornstarch and water (boiled and cold).

However, to achieve a tasty pap, you will need evaporated milk (or skimmed milk) and sugar, so it is safe to say that you need four (4) main ingredients to prepare Ogi (Pap). The ingredients are;

1. Corn Starch –

Corn starch is an essential and primary ingredient in preparing pap. Without this ingredient, pap can not be achieved.

2. Water (boiled and cold) –

Water comes closest to Corn starch in the preparation of ogi (pap).

Optionally, pap can be prepared with corn starch and water. Although it will not be tasty, most people eat it this way.

However, preparing pap with corn starch and water only is claimed to be the best for babies.

3. Evaporated Milk (or skimmed milk) 

In the place of milk and sugar, I have encountered people who have used salt. This is not because they did not have milk and sugar or money to buy, but it was their preference. To them, pap tastes better with salt, but I still prefer milk and sugar. This also is the standard way that most Nigerians prepare their pap.

If you wish to add milk, skimmed milk should be your second option since Evaporated milk gives the best taste.

Also, if you are preparing the pap for a baby, use the recommended baby milk.

Some also love the taste of soybean or soybean milk in their pap, and a few add ground crayfish to taste. It is all a matter of taste.

4. Sugar (cubes or ground) –

Sugar is the best ingredient in preparing pap and the second in giving it a great sweet taste.

There’s no problem with using cubes or granulated sugar, it is the same.

How To Prepare Ogi (Pap)

  • Put a lump of Ogi in a big bowl.
  • Use a tablespoon to crush the lump, and add a small quantity of cold water.
  • Mix until the mixture is lump-free.
  • Aim for your mixed ogi and water to be thick or semi-solid.
  • Boil some cups of water (the amount is relative to the quantity of pap you wish to make). 
  • When the water boils, stir your ogi-cold water mixture properly; the starch residues might have settled below the bowl.
  • Pour the boiled water into the semi-solid ogi and continue turning until it thickens.
  • If it turn out to be watery, do not panic. Turn the ogi into a stainless plate or a small pot, put it on the stovetop, and stir in the presence of heat to thicken it.
  • Add milk, sugar, chocolate powder, soybean powder, salt, etc. and stir vigorously.
  • You can turn your pap into a serving plate and devour it with puff-puff, akara, bread, beans, or any worthwhile dish you prefer.
