Fried rice is a great way to use up leftovers because it is simple and you can make it with anything you have in the fridge.

Rice: You must prepare ahead and use fully cold-cooked rice. A fresh batch of warm (or even lukewarm) rice will not fry well when it hits the hot pan, resulting in soggy and sticky clumps not good. 

So, leftover refrigerated rice is excellent!, you can simply make a fresh batch of rice. Spread the rice out on a baking sheet or similar big flat pan, cover with plastic wrap, and chill for 30 minutes (or 10-15 minutes in the freezer) until well cold.

3. Veggies: Veggies can significantly improve the flavour and freshness of fried rice. Our neighbourhood Chinese restaurant always used both white and green onions, but feel free to adapt this dish to include other tasty stir-fried vegetables!

4. Toasted sesame oil and oyster sauce: If you don’t eat seafood, you can leave off the oyster sauce and still have delicious fried rice. However, this ingredient makes a significant difference in good fried rice, and a little goes a long way.

What Gives Fried Rice its Colour?

Dark mushroom soy sauce is what gives this fried rice its rich brown/caramel colour. This soy sauce doesn’t add much to the saltiness but is used to give dishes that nice caramel brown colour. 

Dark mushroom soy sauce also adds a hint of umami to a dish, but not much saltiness. You can opt not to use this but do note that the fried rice will be a pale brown. You’ll also notice that dark mushroom soy sauce is slightly thicker than regular soy sauce.
