1. Four cups of rice.

2. Five cups of sliced cabbage.

3. 2 cups of sliced carrots.

4. 2 cups sliced green beans.

5. Half a cup of peas.

6. 1 cup sliced green pepper.

7. Cow Liver (300g).

8. 2 kilogrammes of chicken.

9. Vegetable oil. (200ml)

10. 1 cup chopped onions.

11. 2 Tablespoons curry powder (colouring spice).

Step 1: Parboil the 4 cups of rice and cook with half of the meat stock (water from the meat) and two cups of water, cook till it’s almost done. Examine the rice closely. It doesn’t have to be too soft or too harsh; just about there. Set your cooking pot to heat, let it dry, and add about 200ml of vegetable oil.

Step 2: Allow to heat, then add the cut onions and stir for 1-2 minutes.

Step 3: Add the diced carrots and green beans; whichever of these two might go first. Add the chopped liver and sweet corn, and mix.

Meat stock (water from the meat) should be added next, followed by ground pepper (optional), a teaspoon of salt, and one seasoning cube. Stir and taste; add more salt if necessary.

Step 4:  Stir for 1-2 minutes, then add the cabbage and curry powder. (Curry is a yellowish spice that gives fried rice its yellowish colour; add and stir until the desired colour is achieved.)

Step 5: You’d have a yellowish combination that was often too spicy; don’t worry, the rice will balance the flavours. If you like the taste, add the green pepper and stir.

Step 6: Stir in the almost-done white rice. Stir everything together, cover the saucepan, and let it simmer for 5-7 minutes.

Step 7: Serve with fried or fried meat. You can add fried chicken. You could alternatively grill the chicken. Grilled chicken is sometimes far better than fried chicken that way you avoid the oil and cholesterol that come with frying.

Tips to Get the Best Nigerian Fried Rice

  • You can add cayenne pepper if you like some heat!
  • Don’t over-boil your rice before frying it, otherwise, you will end up with soggy fried rice
  • You can add sweet peas, sweet corn and green beans. Vegetables, such as sweet bell peppers.
  • To get the desired crispness, increase the heat to high during the frying process and stir continually while the rice heats up.
  • You can add pieces of beef liver to my fried rice; many people love it but if you don’t, you can leave it out and still enjoy the full flavour of the fried rice.

Because of their mild flavour, chicken or turkey stock is good for creating this fried rice. The beef stock should be avoided because it may overshadow the flavour of the fried rice.
