Ingredients for Coconut Rice

Here are the major ingredients for cooking Coconut rice:

1. 3 Cups of Rice

2. 2 Coconuts (Or One Can of Coconut Milk)

3. Chicken Stock (optional)

4. 1 Medium-sized Onion

5. 2-3 Mixed Bell Peppers

6. 2-3 Scotch Bonnet Peppers

7. 2 Tablespoons Crayfish

8. Bay leaves

9. 1 Tablespoon Black Pepper

10. Curry and Thyme

11. Ginger/Garlic Powder

12. Salt to taste

13. 2 stock cubes.

14. 3 Tablespoons Nosak Famili Vegetable Oil

Cooking Directions

1. Crack open the coconuts and separate them from their husks. Chop the coconuts into pieces, place in a blender, add water and blend. Then add more water and extract the coconut milk from the chaff with your sieve.

P.S: Skip this step if you would prefer to use canned coconut milk. Using fresh coconut however gives the dish a richer creamy, coconut taste.

Cooking Directions

2. Pour the rice into a pot and parboil for 7 minutes. Then wash with cold water, drain and keep aside.

3. Preheat the vegetable oil. When hot, add your chopped onions, mixed bell peppers, scotch bonnet peppers, curry, thyme, bay leaves, stock cubes, black pepper, ginger/garlic powder and salt and allow to sauté for 5 minutes.

4. Add the chicken stock, pour in the coconut milk and allow to simmer. Then add the parboiled rice and crayfish.

5. You can also garnish with shredded coconut when the rice is almost ready.

6. Turn down the heat and allow to simmer for five minutes.

Your coconut rice is ready!
