Fried rice is a combination of vegetables, meats, and a few other items to get a delicious dinner. in Nigeria, this meal is usually served at dinner during weddings, parties, and birthdays. 1. 4 cups of rice.

2. 4 cups of sliced Cabbage.

3. 2 cups of sliced Carrot.

4. 2 cups of sliced Green beans.

5. Half a cup of peas.

6. 1 cup of sliced Green pepper.

7. Cow Liver {300g}.

8. 2kg of Chicken.

9. 200ml Vegetable oil.

10. 1 cup sweet corn.

11. 1 cup of sliced Onions.

12. Curry powder (colouring spice) {2 Tablespoons}.

Step 1: Wash and parboil the chicken and liver combined with a teaspoon of salt, half a cup of sliced onions, a teaspoon of thyme spice, a teaspoon of curry, and two seasoning cubes (a teaspoon of powdered ginger and garlic). Allow the meat to cook for 15 minutes before grilling or deep frying. Remember to keep the chicken stock (meat water) aside. I serve fried rice alongside fried or grilled meat.

Step 2: Chop the cabbage, green beans, carrot, liver, and green peppers and set them aside.

Step 3: Parboil the 4 cups of rice and cook with half of the meat stock (water from the meat) and two cups of water, adding more water if the rice is difficult to cook. You want it to be around 70% done but not fully soft.

Step 4: Set your cooking pot to heat and add 200ml of vegetable oil. You’ll be frying some ingredients for fried rice.

Step 5: Once heated, add the sliced onions and stir for 1-2 minutes.

Step 6: Add diced carrots and green beans (either can be added before).

Step 7: Combine chopped liver and sweet corn and stir. And your pot should look like this.

Step 8: Add chicken stock (meat water), ground pepper (optional), a teaspoon of salt, and a seasoning cube. Stir and taste. Add more salt if desired.

Add the green peas.

Step 9: Stir for 1-2 minutes, then add the cabbage and curry powder to make yellowish fried rice. Taste for salt; it should be peppery and brownish. If it tastes well and looks colourful, add the green pepper. Stir. Because the vegetables are properly browned and seasoned, you may add the precooked rice and mix thoroughly.

Step 10: Stir to achieve a finer consistency. What you get is a delicious pot of fried rice. Combine with fried or grilled chicken and serve.

Fried Rice Variations

You can use any combination of frozen peas, carrots, corn, onions, or edamame; alternatively, use freshly sliced broccoli, bell peppers, mushrooms, or zucchini.

Proteins: You can substitute chopped chicken, steak, pork sausage, fish or prawns in place of the Chinese sausage.

Rice: Arborio, carnaroli, or Japanese sushi rice are examples of short-grain rice. However, long-grain rice, such as basmati or jasmine, can also be used. One of the most popular foods in Nigeria is fried rice, which is enjoyed by practically all Nigerians.
