Step 1: Parboil the rice according to the instructions in Parboiling Rice for Fried Rice. A well-parboiled rice guarantees that the grains do not stay together when it is done. Rinse the parboiled rice with cold water and place it on a strainer to drain all the water.

Step 2: Pour the chicken stock through a sieve to remove any onions, thyme, or other ingredients used to cook the chicken.

Pour the stock into a pot and bring to a boil. Once the water has boiled, add the parboiled rice. Also, add 1 tablespoon of simple yellow curry powder and salt to taste. The plain yellow curry powder is only for colouring and should not contain chillies.

Step 3: The water level should be slightly lower than the rice level, or at most the same. This ensures that all of the water has evaporated by the time the rice is cooked and that it has not been overcooked. 

This is the amount of water required to cook the rice without causing the grains to cling together. Stir the contents; cover the pot and simmer over medium heat. In this manner, the rice does not burn before the water evaporates.

Step 4: Once the water has evaporated, the rice should be perfectly cooked. Perfect fried rice has grains that are separated from one another, and are bite-resistant, but not hard.

Step 5: Transfer the rice to a casserole dish or another pot to cool more rapidly. Again, this is necessary to keep the grains from clinging to one another. If left in the initial hot pot, the rice will continue to cook and eventually clump together.

Step 6: At this point, divide the vegetables into four, five, or six equal halves. The rice will be fried in batches, therefore this amount is determined by how much rice you can comfortably fry in the pan or pot. Also, divide the cooked rice and sliced cow liver equally.

Step 7: Now, add a small amount of vegetable oil to a frying pan. This amount of oil should be enough to soak up one part of the cooked rice and one part of each vegetable. When the oil is hot, add 1 part chopped onions and stir for 10 seconds, then 1 part diced cow liver, 1 part each of the diced veggies, and finally 1 part cooked rice.

If necessary, increase the amount of salt. If the colour needs to be adjusted, more curry powder can be added at this point. Stir until all of the ingredients are completely combined before transferring to a dry pot.

  • Wash all the vegetables that will be used in the fried rice. Scrape the carrots and chop them into small cubes. Cut the green beans into little pieces about 0.7 cm in length.
