Nigerian Okra Soup is a simple stewed okra soup recipe. It is a popular delicacy among the Yoruba ethnic group in western Nigeria. It is also known as Ila Alasepo in Yoruba.

This Nigerian okra soup recipe can be made with or without palm oil. I prefer palm oil because I’m not a health-conscious person, thus everything goes…?

I never prepare Nigerian Okra soup with Edible Potash (Kaun), in fact, I never use it at all since I’m not comfortable with it, therefore to ensure that my okra soup has a significant degree of elasticity while preserving its crunchiness and freshness, I blend some of the okra and chop the remainder.

Feel free to stick with your favorite consistency, whether crunchy or puréed.

Some Okra soup recipes include vegetable leaves; I never use them, but feel free to add them at the end of the cooking procedure. Preferred vegetable leaves include pumpkin leaves (Ugu), spinach, Uziza, and basil leaves.

Ingredients for Okro Soup

1. 25-30 Pieces Fresh Okra

2. 1 Cooking Spoon Palm Oil

3. 800 grams of Assorted Meats (Shaki, Ponmo, Cowfoot, Beef, Goat meat, and offals are ideal)

4. 2-3 Pieces Stock Fish

5. 2 Medium Smoked Fish

6. Fresh prawns

7. Smoked Prawns

8. 1 Cooking Spoon Crayfish

9. 2-3 Chopped Scotch Bonnet (Atarodo)

10. 1 Bell Pepper Chopped (Tatashe)

11. 4 Cloves Garlic, Minced

12. 1/2 Cooking Spoon of Locust Beans (Iru)

13. 1/2 Cooking Spoon Cayenne Pepper (Ata gungun)

14. 1 Medium Onion

15. Knorr Chicken Cubes

16. Salt to taste

Preparation Method

Prepare by blending 1/3 of the Okra and chopping the rest. If you want it thick with no flexibility, chop everything or mix everything if you don’t like chunks. I prefer it both ways. Clean and soak the smoked salmon in boiling water to remove any dirt, then shred and set aside.

Cook the meats over medium to high heat with the chopped onion, Knorr Cubes, garlic, and salt to taste. Begin with rougher meats such as Shaki, Cow Foot, and Ponmo, and gradually progress to softer meats. If using stock fish, combine it with milder meats…

When the meats have softened, transfer them to a bowl, leaving the stock in the pot. Boil palm oil over medium heat for 6-8 minutes.

Add ground pepper, followed by locust beans. Add ground crayfish, followed by chopped peppers.

Allow to cook for three minutes. Now, add the blended okra. Stir rapidly, then add chopped okra. Add fresh prawns and simmer for 5 minutes.

Put the shredded smoked fish, smoked prawns, cooked meats, and smoked fish back in the saucepan. Combine and add chopped okra.

Now your soup is ready.
