Nigerian Rice and Bean Ingredients 

1. 500 grams Rice

2. 250 grams of black-eyed beans

3. Meat/chicken stock(optional), you can use water and extra seasoning

4. Pepper to taste

5. 5 cooking spoonfuls of tomato stew/fish stew/chicken stew /beef stew

6. 1 chopped medium-sized onion

7. 2 tablespoonfuls of ground crayfish

8. 1 stock cube/bouillon cube

Step 1: To reduce cooking time, wash and soak the beans for approximately 3 hours. Pour off the water, then rinse the beans in clean water and place them in a pot.

Step 2: Pour enough water to cover the beans and simmer until soft but not mushy (add a little baking soda while boiling to speed up the process).

Step 3:  Parboil the rice accordingly 

Step 4. In a bigger saucepan, bring the stew and meat/chicken stock (or water) to a boil. Then add the parboiled rice, cooked beans, ground crayfish, stock cubes, pepper, and salt to taste.

Step 5:  Mix thoroughly, and add more water if the liquid in the pot is not at the same level as the rice and beans. Cover the saucepan and simmer over medium heat until there is no more liquid in it.

Step 6: Remove the lid, stir thoroughly, and serve hot with fried plantains, chicken, fish, turkey, beef, or any meat of your choice. Nigerian Rice and Beans are typically served with a chilled beverage.
