1.2 cups converted rice (13 1/4 ounces; 375 grammes), such as Uncle Ben’s Original or golden sella basmati

2. 3 1/2 cups (825 mL). Divide Nigerian-style stock and add additional as needed.

3. 2 tablespoons (30 mL) Virgin coconut oil or vegetable oil

4. 1 medium carrot (2 3/4 ounces; 75g), diced into 1/4-inch pieces

5. 1 small red or white onion (2 1/4 ounces; 60g), cut into quarter-inch dice

6. 1 1/2 ounces (45 grams) Green beans with stem ends removed and sliced into 1/4-inch-thick rounds.

7. Kosher salt.

8. 2 scallions, cut ends, white and green sections separated, thinly sliced crosswise, divided 

9. 1/2 large red bell pepper (2 3/4 ounces; 75g) stemmed, seeded, and diced into 1/4-inch pieces

10. 1/2 medium green bell pepper (2 1/4 ounces; 60g), stemmed and seeded, diced into 1/4-inch pieces,

11. 1/4 cup (60g) drained canned entire kernels of sweet corn

12. 2 teaspoons of Nigerian-style curry powder (see notice).

13. 1 teaspoon dried thyme.

14. 1/4 teaspoon freshly ground black pepper, plus extra to taste.

15. Two dried bay leaves.

How to Make Nigerian Fried Rice Vegan

To have a friend rice vegan you can easily replace the liver in this recipe with whatever vegan meat alternative you choose. Mushrooms, jackfruit, and tofu would all work well.

Another substitution to make this a fantastic vegan supper is to use vegetable stock and vegetable bouillon instead of the meat stock and chicken bouillon used in the original recipe.
