We generally make these rice cakes for breakfast but occasionally enjoy them for dinner when my mum is out of town and I want to make something quick and easy.
Growing up, I remember my mum making these for me every time we had leftover rice in the fridge. They are great topped with salsa!

Rice Cake ingredients are:
½ cup cooked white rice
1 egg
1 tablespoon chopped fresh basil (Optional)
1 teaspoon milk
salt and ground black pepper to taste

Directions
Step 1: Mix rice, egg, basil, milk, salt, and pepper together in a bowl.
Step 2: Melt butter in a skillet over medium heat. Scoop rice mixture into the skillet in two equal portions. Cook until browned on the bottom, about 3 minutes. Flip and continue to cook until browned on the other side, about 2 more minutes.
