Nigerian White soup is called Ofe Nsala by the Igbos and Afia Efere by the people from Efik and Ibibio. This is one popular soup in Eastern Nigeria.

Why is it called white soup you might wish to find out. It is because it does not make use of palm oil hence the pale look of the soup compared to soups made with palm oil.

This Nigerian white soup is easy to cook and delicious. It is traditionally made with catfish. For this recipe, I used seafood only including the traditional catfish but you can add meat and chicken if you like.

To make white soup, start by gathering your ingredients: assorted meats (such as chicken, goat meat, or fish), assorted spices (like Uziza seeds, Utazi leaves, and crayfish), yam, palm oil, and seasoning cubes.

Begin by boiling the meats until tender, then set them aside. In a separate pot, cook pieces of yam until soft, then blend them with some of the meat stock to form a smooth paste. Return the blended yam to the pot and add the boiled meats, palm oil, and assorted spices.

Allow the mixture to simmer until well combined and the flavours have melded together. Adjust seasoning as needed and serve hot. White soup, also known as Ofe Nsala in Igbo cuisine, is a delicious and hearty dish enjoyed across Nigeria, celebrated for its rich flavour and creamy texture.
