Yam and Egg Sauce: A Delicious Combination That You Must Try

Yam and Egg sauce is one of the breakfast staples in Nigeria or should I say weekend breakfast. Last Saturday, Richard Stephen made breakfast and I thought I would share with you my cousin’s yam and egg sauce.

Boiled yam and egg sauce is quite easy to make. Typically in Nigeria, we use tomatoes, scotch bonnet chili, and onions in preparing this sauce.

Here are the basic ingredients for yam and egg sauce:

1. Tuber of yam

2. Some raw eggs

3. Tomatoes

4. Scotch bonnet

5. Onion

6. Red bell pepper

7. Vegetable oil

8. Salt plus

9. Seasoning cube

10. Curry

11. Thyme

How to Cook Yam for Your Egg Sauce

Slice yam into about 1-inch size and peel the skin off. Rinse in clean water until water runs clear and no residue in the water.

Put yam in a pan, add enough water to cover it, add salt place on medium heat, and cook till soft. Test with a fork, if it goes through, then the yam should be soft enough. Drain water from the yam if you want.

Break eggs into a shallow bowl, and whisk until egg white and egg yolk are well combined, add salt and whisk to combine then set it aside

Place a frying pan on a medium/low heat, add up vegetable oil, heat for about two to three minutes

Add chopped peppers and onions (this should sizzle) and cook for about four to five minutes or till oil floats on the sauce, add salt, seasoning, curry, and thyme. Stir to combine ingredients with sauce and also avoid sauce sticking to the pan.

Add whisked eggs to the sauce and leave for about two minutes, then your sauce is ready. Pick some slices of yam and put them in your bowl, scoop the sauce into another plate, and resume the consumption.

In conclusion, yam and egg sauce is a posh combination that has never been ignored by any Nigerian or lover of Nigerian food. It is highly nutritious and very easy to prepare.
